I called Apple today and regarding my membership and they have yet to verify my account. Are they not verifying my account because I am a minor?

That could be the case if you are under 18.

You’ll need to sign up in a parent or guardians name until you’re 18.

As per my Apple ID, I was born in the year 2000. So I am 21. How could I be a minor?

You are not classified as a minor. You can contact Apple or just wait.

None of us can really do anything to speed that along

Clearly you are not a minor. As I said, “That could be the case IF you are under 18”
